Slow-Carb Sandwich




It was a sandwich for lunch kind of day, and this is how Slow-Carbers do it.

BoarsHead lunch meat.
Hummus.
Spinach.
Purple onion.
Cucumber.

You can add anything you want to it.  This is very good and I like it better now than a bread sandwich.  The only thing... kinda messy.  Keep your napkin close!

  2. I have to eat gluten free, and this is brilliant Ashley!! It literally never occurred to me to use the meat as a wrap-- duly noted!

    1. Tabetha, 4 years ago I put my son on gluten free for his allergies. Trying to change a 3 year old boy's diet... NOT SO EASY! This is one thing he loved. Now my hubby and I are doing this Slow-Carb eating now and I'm pulling out all my old tricks. It's working well for us! :)
