This diet is all about being creative. For those of you following it, I encourage you to search and experiment until you find foods you love. Here are a few meals and snacks I have discovered this past week that ROCK! Try these out, and let me know when you come up with something good.
CHICKEN AND HUMMUS
This is so far my FAVORITE food to eat. I could eat it for every meal. I cooked up chicken strips and added it to a plate of hummus, diced tomatoes and chopped spinach. I’ve also added red, yellow and orange bell peppers. I drizzled the top with olive oil, salt and pepper. Oh man, this is REALLY good. My favorite Greek restaurant is GYRO TABOULI here in Murfreesboro, check it out if you’ve never been. I always order the hummus plate with chicken and decided to recreate it at home. The only thing I’m missing is the feta cheese and the tabouli, which I will figure out how to make soon. We are staying away from dairy, but I will use sheep or goat feta if I have it on hand.
SPINACH SALAD WITH STEAK
I’m not a big steak fan at all! Jeremy, however, is cooking it for us and it is really good. I enjoyed it with this spinach salad, topped with tomatoes, nuts, olive oil, red whine vinegar, salt and pepper = perfect and satisfying
I REALLY enjoyed this oven roasted asparagus.
If it’s thick, cut it in half.
Line pan with foil – EASY to clean!
Drizzle with Olive Oil, Garlic, Salt and Pepper
Cook 425° for 12-15 minutes.
Ok, it was very hard to get a good picture, and this one is not great at all, but this dip is SOOOOO Yummy!
Ripe avocado, diced purple onion (go easy on this), diced tomato, minced garlic olive oil, fresh squeezed lemon, salt & pepper, and parsley. I play around with the amounts.
I usually add feta to this, but I will leave it out being that I am so committed to this diet for 6 weeks! Also, I LOVE to eat this with chips. Instead, I used fresh veggies to scoop it. My favorite is the celery. I still enjoyed the dip. I eat this often!
