AN ARMENIAN EGGPLANT CASSEROLE

My daughter has been busy this week studying the country of Armenia!  Friday she will make a presentation to her class.  As part of her presentation, she will take samples of a common meal they eat:
TRADITIONAL ARMENIAN 
EGGPLANT CASSEROLE
 
I decided to post the recipe because it consists of healthy vegetables that we bought at our local FARMERS MARKET!  Also, I thought it was really good!

             WHAT WE USED
  • 2 small eggplants
  • 1 medium onion
  • 1 green bell pepper
  • 2 minced garlic cloves
  • 4 medium tomatoes
  • olive oil
  • salt & pepper
  • tarragon

 

preheat oven to 325º

DICE:  eggplant, onion, green bell pepper, and garlic
 
myADVICE
Always keep a “trash” bowl close when cooking!
Sauté all that’s been diced in olive oil until soft.
Add salt and pepper.
Dice the 4 tomatoes.
ADD tomatoes to the pan and cook a few more minutes.
 
Prepare the fresh tarragon and add it to the vegetables.
BAKE it on 325º for 40 minutes.
 
In Armenia, they use sour cream a lot in their cooking.  I tried a little bit with this and thought it was good.  
You can also eat it hot or cold.  
I personally prefer it hot.

Roasting Almonds Experiment- 6 flavors!

This week my friend Ashley G, Taylor, and I played around with 

ROASTING ALMONDS. 
We used 10 lbs of RAW ALMONDS.
 Some turned out AMAZING and some were NOT so awesome, but we learned a lot! 
 I will be posting the recipes and reviews this next week.

Homemade Laundry soap

 LAUNDRY SOAP making day  
the reason…
  1. It’s Non-Toxic

  4. Quick & Easy to make
  5. and CHEAP!!!!
Here are a few cost comparisons:
  • Tide with Bleach powder…..$0.21 per load
  • Arm & Hammer liquid………$0.21 per load
  • Homemade powder……………$0.05 per load

 

*This recipe makes 32 oz of detergent – $2.98 – 64 loads
*Use 1 TBSP per load2 for really dirty loads

 
Here is what I used:
Fels-Naptha = $1.99
 
[You can also use Pure & Natural, Zote, or an Ivery bar]
Step 1  
Grate the entire soap bar.
Step 2
Add 1 cup of Washing Soda
 
Step 3
Add 1 cup of BORAX
Step 4
Stir together
Step 5
Store it in a container and label it!
I don’t want my kids sprinkling this over their tacos. 
It kinda look like grated cheese!
Next time I will make the liquid version of this homemade soap!
This is a great job for your kiddo’s.  
They’ll love it and you get soap out of it!

EXERCISING IN THE HEAT

Happy Monday!
 
I hope you can fit in some workouts sessions in your schedule this week!  
Let’s make this week a good one that gets us closer to our goals!
 
Looks like we are going to have some hot and humid days ahead.  Exerising in these conditions intensifies how hard the body has to work to maintain normal function. 
So here are some tips in staying safe if you are exercising outside…
 

  • Hydrate ahead of time…research suggests that drinking plenty of cool water prior to exercise will preemptively cool the body and may boost performance in hot weather!
Try this:
Drink plenty of fluid 2 hours before workout.  Drink 5-10 fl. oz every 15 min during exercise. Drink fluids with electrolytes, like ADVOCARE Rehydrate
during and after workout.  This is all we give our kids.  No gatorade for my family!
  • Wear light colored clothing
  • Let your body acclimate to the climate.  Gradually getting your body use to the heat can result in better sweat response, lower body temp, and lower heart rate!
  • If you have the choice, workout in the morning when temps are lower
  • Use 

    Frogg Toggs Chilly Pad Cooling Towel 

    to keep you cool!  

     

    They work really well.
